Daily candy

I finished my second batch of fleur de sel caramels today, using this recipe. It’s really easy, but like all candy recipes, demands strict attention to the thermometer. I let today’s batch creep up a degree past the firm ball stage, and what do you know – it was slightly brittle when I went to cut it. The flavor was unaffected, thank god.

It’s bad news having this stuff around the house. I packaged it up to give away, but there were more than a few shards due to the brittle issue that S & I are obliged to take for the team. Can’t give away a flawed candy…
